Description
Greek Yogurt Brownies are fudgy, rich, and healthy. Made with Greek yogurt instead of butter, they are incredibly moist and packed with protein. Nobody believes they are a better-for-you treat.
Ingredients
1 cup Plain Greek yogurt (full fat or 2%)
3/4 cup Granulated sugar
2 large Eggs
1 tsp Vanilla extract
1/2 cup Cocoa powder
1/2 cup All-purpose flour
1/2 tsp Baking powder
1/4 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper
- In a large bowl, whisk together Greek yogurt, sugar, eggs, and vanilla extract until smooth
- Sift cocoa powder, flour, baking powder, and salt into the wet mixture. Stir gently until just combined. Do not overmix
- Pour the thick batter into the prepared pan and spread it evenly
- Bake for 25-28 minutes. A toothpick inserted into the center should come out with moist crumbs
- Cool completely in the pan before cutting into 9 squares. The brownies set as they cool
Notes
Do not overbake; they look underdone when you pull them out but that's perfect for fudgy brownies.
Use room temperature ingredients for smoothest batter.
For deeper flavor, use Dutch-process cocoa powder.
Let cool fully for clean slices.
Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to 3 months.
