Description

Greek Yogurt Brownies are fudgy, rich, and healthy. Made with Greek yogurt instead of butter, they are incredibly moist and packed with protein. Nobody believes they are a better-for-you treat.


Ingredients

1 cup Plain Greek yogurt (full fat or 2%)
3/4 cup Granulated sugar
2 large Eggs
1 tsp Vanilla extract
1/2 cup Cocoa powder
1/2 cup All-purpose flour
1/2 tsp Baking powder
1/4 tsp Salt


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper
  2. In a large bowl, whisk together Greek yogurt, sugar, eggs, and vanilla extract until smooth
  3. Sift cocoa powder, flour, baking powder, and salt into the wet mixture. Stir gently until just combined. Do not overmix
  4. Pour the thick batter into the prepared pan and spread it evenly
  5. Bake for 25-28 minutes. A toothpick inserted into the center should come out with moist crumbs
  6. Cool completely in the pan before cutting into 9 squares. The brownies set as they cool

Notes

Do not overbake; they look underdone when you pull them out but that's perfect for fudgy brownies.

Use room temperature ingredients for smoothest batter.

For deeper flavor, use Dutch-process cocoa powder.

Let cool fully for clean slices.

Store in an airtight container at room temperature for up to 3 days, refrigerate for a week, or freeze for up to 3 months.
