A quick and easy weeknight dinner featuring ground beef and crisp-tender broccoli in a savory sauce, made with common pantry ingredients.
Ingredients
1 lb Ground beef (80/20 or lean)
3 cups Broccoli florets
1/3 cup Soy sauce (low sodium)
2 tbsp Brown sugar
3 cloves Garlic (minced)
1 tsp Fresh ginger (grated)
1 tbsp Cornstarch
1 tbsp Sesame oil
1/4 cup Water
Instructions
- Make the sauce: Whisk together soy sauce, brown sugar, minced garlic, grated ginger, cornstarch, and water in a small bowl. Set aside
- Cook the beef: Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart. Drain excess fat. Transfer beef to a plate
- Cook the broccoli: Add sesame oil to the skillet. Add broccoli florets and cook for 3-4 minutes, until bright green and tender
- Combine everything: Return beef to the skillet. Pour the sauce over the top. Stir well and let simmer for 1-2 minutes until sauce thickens
- Serve immediately
Notes
For a gluten-free version, use tamari or coconut aminos instead of soy sauce. Ensure cornstarch is labeled gluten-free.
Do not overcook broccoli; it should remain crisp-tender.
Leftovers can be refrigerated in an airtight container for up to 4 days. Reheat in a skillet with a splash of water.
Freezing is not recommended as the broccoli may become mushy and the sauce may separate.
