Description
These Vegan Samosa Wraps combine the warm, spiced potato and pea filling of a samosa with the convenience of a soft tortilla. They come together quickly in one pan, making them perfect for busy weeknights. Serve with mango chutney for a complete, comforting meal.
Ingredients
2 medium Russet potatoes, peeled & cubed
1/2 cup frozen peas
1/2 yellow onion, finely diced
1 tbsp fresh ginger, grated
2 cloves garlic, minced
1 tsp ground cumi
1 tsp ground coriander
1/2 tsp garam masala
1/4 tsp turmeric
4 large flour tortillas
Mango chutney for serving
Instructions
- Boil the cubed potatoes until tender. Drain well
- Meanwhile, heat a skillet over medium heat with a splash of water or oil. Sauté the onion until soft
- Add the ginger and garlic. Cook for one minute
- Add all the spices (cumin, coriander, garam masala, turmeric). Stir until fragrant
- Mash the cooked potatoes slightly. Add them to the skillet
- Stir in the frozen peas. Cook for two minutes. Let the filling cool slightly
- Warm the tortillas. Place a generous scoop of filling in the center
- Fold in the sides. Roll tightly
- Serve immediately with mango chutney
Notes
Do not overcook the potato filling; it should be soft but not mushy. Slightly mashing helps hold the wrap together.
Warm the tortillas before rolling to prevent cracking.
Let the filling cool completely before assembling to avoid soggy wraps.
Store leftover filling separately from tortillas in the fridge for up to 4 days. Assemble fresh for best texture.
