Ingredients
1 tbsp Olive oil
1 lb Ground beef (or turkey)
1 pkg (1 oz) Taco seasoning
1 cup Water
1 (15 oz) can Black beans, rinsed and drained
1 (15 oz) can Corn, drained
1 (10.75 oz) can Cream of mushroom soup (or cream of chicken)
1/2 cup Milk
1 cup Shredded cheddar cheese, divided
2 cups Frito corn chips, crushed slightly
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish
- Heat olive oil in a large skillet over medium-high heat. Add ground beef; cook until completely browned. Drain any excess fat
- Stir in the taco seasoning and water. Bring to a simmer; cook for 5 minutes, or until the liquid reduces. Remove from heat

- Spread half of the Frito chips evenly in the bottom of your prepared baking dish
