Ingredients
- Pitted Dates (Medjool preferred) 1 cup, chopped
- Boiling Water 1 cup
- Baking Soda 1 teaspoon
- All-Purpose Flour 1 ½ cups
- Baking Powder 1 teaspoon
- Salt ¼ teaspoon
- Unsalted Butter, softened ½ cup (1 stick)
- Granulated Sugar ½ cup
- Eggs, large 2
- Vanilla Extract 1 teaspoon
- For the Sauce:
- Unsalted Butter ½ cup (1 stick)
- Brown Sugar (lightly packed) ½ cup
- Heavy Cream ½ cup
- Vanilla Extract ½ teaspoon
Instructions
1. 1. Prepare the Dates: Combine chopped dates and baking soda in a bowl. Pour boiling water over them. Let them soak for 10-15 minutes until softened.
2. 2. Combine Dry Ingredients: Whisk together flour, baking powder, and salt in a separate bowl.
3. 3. Cream Wet Ingredients: In a large bowl, cream softened butter and granulated sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
4. 4. Combine Wet & Dry: Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
5. 5. Add Dates: Drain the softened dates, reserving the soaking liquid. Stir the dates into the batter. If the batter seems too thick, add a tablespoon or two of the reserved date liquid until it reaches a thick but pourable consistency for your sticky date pudding.
6. 6. Bake: Pour the batter into a greased 8×8 inch baking dish. Bake at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. 7. Make the Sauce: While the pudding bakes, melt butter and brown sugar in a saucepan over medium heat. Stir until the sugar dissolves. Add heavy cream and vanilla, then simmer for 2-3 minutes until thickened.
8. 8. Serve: As soon as the traditional sticky date pudding comes out of the oven, pour half of the warm caramel sauce over it. Serve warm with extra sauce on the side.
