Description

Ingredients

1/2 cup granulated sugar
1/4 cup water
1 tsp chili powder
1/2 tsp sea salt


Instructions

  1. Combine tamarind paste, sugar, and water in a small saucepan. Cook over medium-low heat, stirring constantly for 10-15 minutes until thickened and pulling away from pan sides
  2. Remove from heat and stir in chili powder and sea salt. Let cool until safe to handle
  3. Lightly oil hands, pinch off small portions of dough, and roll into balls or logs
  4. Roll each piece in extra sugar to coat completely

Notes

Use a non-stick saucepan for easier cleaning.

Adjust chili powder to control spice level.

Store in airtight container at room temperature for up to 2 weeks.

For variation, roll in Tajín instead of sugar or add lime zest.
