1 tsp chili powder

Instructions
- Combine tamarind paste, sugar, and water in a small saucepan. Cook over medium-low heat, stirring constantly for 10-15 minutes until thickened and pulling away from pan sides
- Remove from heat and stir in chili powder and sea salt. Let cool until safe to handle
- Lightly oil hands, pinch off small portions of dough, and roll into balls or logs
- Roll each piece in extra sugar to coat completely
Notes
Use a non-stick saucepan for easier cleaning.
Adjust chili powder to control spice level.
Store in airtight container at room temperature for up to 2 weeks.
For variation, roll in Tajín instead of sugar or add lime zest.
