Ingredients

2 tbsp Tamarind Concentrate
1/2 cup Warm Water
2 tbsp Brown Sugar
1 tbsp Fish Sauce
1 tsp Rice Vinegar
Instructions
- In a small bowl, whisk the tamarind concentrate with warm water until completely dissolved
- Stir in the brown sugar, fish sauce, and rice vinegar. Whisk vigorously until the sugar dissolves
- Pour the mixture into a small saucepan. Heat over medium-low for 5-7 minutes, stirring often, until slightly thickened
- Remove from heat and let cool to room temperature. The sauce will thicken further as it cools
Notes
For a vegan version, substitute fish sauce with soy sauce or tamari.
If sauce thickens too much in storage, whisk in a teaspoon of warm water to loosen.
Flavors improve after a day in the fridge; store in an airtight container for up to 2 weeks.
