Description
Strawberry Oatmeal Bars combine a buttery oat crust with sweet, jammy strawberry filling. They are wholesome yet decadent, perfect for breakfast or dessert, and easy to make with one bowl and pantry staples.
Ingredients
1 cup Rolled oats
1 cup All-purpose flour
1/2 cup Unsalted butter, melted
1/2 cup Brown sugar
2 cups Fresh strawberries, chopped
1 tbsp Lemon juice
1 tbsp Cornstarch
Instructions
- Preheat oven to 375°F (190°C). Line a 9×9-inch baking dish with parchment paper
- In a bowl, combine rolled oats, all-purpose flour, brown sugar, and melted butter. Stir until crumbly
- Press half of the oat mixture evenly into the prepared baking dish to form the bottom crust
- In another bowl, toss chopped strawberries with lemon juice and cornstarch. Spread the strawberry mixture over the crust
- Sprinkle the remaining oat mixture on top of the berries. Gently press dow
- Bake for 35 to 40 minutes, until golden brow
- Allow bars to cool completely in the pan before slicing (this helps them set)
- Slice and serve. For best results, chill before cutting
Notes
Always chill the bars before cutting to prevent crumbling. Use cold butter for a flakier topping. Line pan with parchment for easy removal. Do not overfill with berries to avoid sogginess. If using frozen berries, thaw and drain first. For gluten-free, use certified gluten-free oats and a gluten-free flour blend. Bars can be stored at room temperature for up to 3 days, refrigerated for up to 1 week, or frozen unbaked for up to 3 months.
