Description

Strawberry Oatmeal Bars combine a buttery oat crust with sweet, jammy strawberry filling. They are wholesome yet decadent, perfect for breakfast or dessert, and easy to make with one bowl and pantry staples.


Ingredients

1 cup Rolled oats
1 cup All-purpose flour
1/2 cup Unsalted butter, melted
1/2 cup Brown sugar
2 cups Fresh strawberries, chopped
1 tbsp Lemon juice
1 tbsp Cornstarch


Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×9-inch baking dish with parchment paper
  2. In a bowl, combine rolled oats, all-purpose flour, brown sugar, and melted butter. Stir until crumbly
  3. Press half of the oat mixture evenly into the prepared baking dish to form the bottom crust
  4. In another bowl, toss chopped strawberries with lemon juice and cornstarch. Spread the strawberry mixture over the crust
  5. Sprinkle the remaining oat mixture on top of the berries. Gently press dow
  6. Bake for 35 to 40 minutes, until golden brow
  7. Allow bars to cool completely in the pan before slicing (this helps them set)
  8. Slice and serve. For best results, chill before cutting

Notes

Always chill the bars before cutting to prevent crumbling. Use cold butter for a flakier topping. Line pan with parchment for easy removal. Do not overfill with berries to avoid sogginess. If using frozen berries, thaw and drain first. For gluten-free, use certified gluten-free oats and a gluten-free flour blend. Bars can be stored at room temperature for up to 3 days, refrigerated for up to 1 week, or frozen unbaked for up to 3 months.
