These Strawberry Banana Oat Bars are a naturally sweet, soft, and easy-to-make snack perfect for breakfast, lunchboxes, or a quick treat. Made with simple pantry staples like ripe bananas and rolled oats, they are gluten-free friendly and loved by the whole family.
Ingredients
3 medium ripe bananas
2 cups rolled oats
1 cup fresh strawberries, chopped
1 large egg
3 tablespoons honey or maple syrup
1 teaspoon vanilla extract
0.5 teaspoon cinnamo
0.25 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper
- Mash three ripe bananas in a large bowl until completely smooth
- Add the egg, honey, and vanilla extract. Stir everything together until combined
- Fold in the rolled oats, cinnamon, and salt. Mix gently; do not overmix
- Carefully fold in the chopped strawberries, saving a few for the top
- Pour the batter into the pan and spread it evenly. Top with remaining strawberries
- Bake for 25 minutes, until edges are golden and a toothpick comes out clea
- Let the bars cool completely in the pan, then slice into squares. Enjoy!
Notes
Use very ripe bananas for natural sweetness; this reduces the need for added sugar.
Let the bars cool fully before slicing to prevent crumbling.
Line the pan with parchment paper for easy removal.
Store in an airtight container in the refrigerator for up to 5 days, or freeze individually wrapped bars for up to 3 months.
For a vegan version, replace the egg with a flax egg (1 tbsp ground flaxseed + 3 tbsp water).
To reheat, microwave for 15 seconds or enjoy cold.
