Ingredients
4 (6 oz each) cod fillets
3 tablespoons butter
4 garlic cloves, minced
¼ cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey
To taste salt and pepper
2 green onions, sliced for garnish
Instructions
- Pat the cod fillets dry and season with salt and pepper
- Heat a large skillet over medium-high heat and add the butter. Let it melt completely
- Add the minced garlic and stir for 30 seconds until fragrant
- Place the cod fillets in the pan and cook for 3 minutes per side until golde
- Lower the heat. In a small bowl, whisk together sweet chili sauce, soy sauce, and honey. Pour the mixture over the fish
- Spoon the sauce over the cod continually and let it simmer for 2 minutes until the sauce thickens and becomes sticky
- Garnish with green onions and serve immediately
Notes
Use a non-stick skillet to prevent sticking and do not overcrowd the pan; cook in batches if needed.
Pat the cod very dry for a good sear; watch the garlic closely to avoid burning.
Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over low heat with a splash of water, or in the microwave in 30-second bursts. Do not freeze.
