Ingredients

3 cups Fresh spinach (packed)
1 cup Cottage cheese (full-fat or low-fat)
0.5 cup Plain Greek yogurt
2 cloves Garlic
1 tablespoon Nutritional yeast (optional)
0.5 teaspoon Salt
0.25 teaspoon Black pepper
Instructions
- Wilt the spinach. Heat a large pan over medium heat. Add the fresh spinach. Cook for 2 minutes, just until it wilts. Drain any excess liquid
- Combine ingredients. Add the wilted spinach, cottage cheese, Greek yogurt, garlic cloves, nutritional yeast, salt, and pepper to a food processor or blender
- Blend until smooth. Process the mixture for 30-60 seconds. Scrape down the sides as needed. Your Spinach Protein Dip should be creamy and uniform
- Taste and adjust. Add more salt or pepper if desired. Blend again briefly
- Serve immediately or chill. For the best flavor, refrigerate this Spinach Protein Dip for 30 minutes before serving
Notes
For a dairy-free version, substitute cottage cheese and yogurt with silken tofu.
Squeeze wilted spinach well to avoid a runny dip.
Store in an airtight container in the fridge for up to 4 days. Do not freeze.
