Description

A creamy, savory, high-protein spinach dip made with cottage cheese, Greek yogurt, and fresh spinach. Perfect for busy weeknights, ready in under 10 minutes, and loved by kids and adults alike.


Ingredients

3 cups Fresh spinach (packed)
1 cup Cottage cheese (full-fat or low-fat)
0.5 cup Plain Greek yogurt
2 cloves Garlic
1 tablespoon Nutritional yeast (optional)
0.5 teaspoon Salt
0.25 teaspoon Black pepper


Instructions

  1. Wilt the spinach. Heat a large pan over medium heat. Add the fresh spinach. Cook for 2 minutes, just until it wilts. Drain any excess liquid
  2. Combine ingredients. Add the wilted spinach, cottage cheese, Greek yogurt, garlic cloves, nutritional yeast, salt, and pepper to a food processor or blender
  3. Blend until smooth. Process the mixture for 30-60 seconds. Scrape down the sides as needed. Your Spinach Protein Dip should be creamy and uniform
  4. Taste and adjust. Add more salt or pepper if desired. Blend again briefly
  5. Serve immediately or chill. For the best flavor, refrigerate this Spinach Protein Dip for 30 minutes before serving

Notes

For a dairy-free version, substitute cottage cheese and yogurt with silken tofu.

Squeeze wilted spinach well to avoid a runny dip.

Store in an airtight container in the fridge for up to 4 days. Do not freeze.
