Description

A quick and flavorful ground beef stir-fry with garlic, ginger, and crisp-tender vegetables, served over rice for a satisfying weeknight dinner.


Ingredients

1 lb Lean ground beef
2 cups Broccoli florets
1 Red bell pepper, sliced
1 Carrot, julienned
6 Garlic cloves, minced
1 tbsp Fresh ginger, grated
3 tbsp Soy sauce (or tamari)
2 tsp Sriracha or chili paste
1 tbsp Sesame oil
4 cups Cooked rice or cauliflower rice


Instructions

  1. Cook the beef. Heat a large skillet over medium-high heat. Add ground beef. Cook until browned, breaking it apart. Drain excess fat
  2. Sauté aromatics. Push beef to one side. Add sesame oil, garlic, and ginger. Cook for 30 seconds until fragrant
  3. Add veggies. Toss in broccoli, bell pepper, and carrot. Stir-fry for 4-5 minutes. Veggies should be crisp-tender
  4. Make the sauce. In a small bowl, whisk soy sauce and sriracha together. Pour over the beef and veggies
  5. Combine and serve. Stir everything well for 1 minute. Divide over rice. Serve immediately

Notes

For a milder dish, reduce the chili paste. For vegan option, use crumbled tofu and mushrooms. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat with a splash of water if dry.
