Description
A quick and flavorful ground beef stir-fry with garlic, ginger, and crisp-tender vegetables, served over rice for a satisfying weeknight dinner.
Ingredients
1 lb Lean ground beef
2 cups Broccoli florets
1 Red bell pepper, sliced
1 Carrot, julienned
6 Garlic cloves, minced
1 tbsp Fresh ginger, grated
3 tbsp Soy sauce (or tamari)
2 tsp Sriracha or chili paste
1 tbsp Sesame oil
4 cups Cooked rice or cauliflower rice
Instructions
- Cook the beef. Heat a large skillet over medium-high heat. Add ground beef. Cook until browned, breaking it apart. Drain excess fat
- Sauté aromatics. Push beef to one side. Add sesame oil, garlic, and ginger. Cook for 30 seconds until fragrant
- Add veggies. Toss in broccoli, bell pepper, and carrot. Stir-fry for 4-5 minutes. Veggies should be crisp-tender
- Make the sauce. In a small bowl, whisk soy sauce and sriracha together. Pour over the beef and veggies
- Combine and serve. Stir everything well for 1 minute. Divide over rice. Serve immediately
Notes
For a milder dish, reduce the chili paste. For vegan option, use crumbled tofu and mushrooms. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat with a splash of water if dry.
