This Southern Chicken Bog Recipe turns simple ingredients into pure comfort. It's a one-pot wonder, a true Lowcountry classic. Creamy, smoky, and deeply satisfying, it uses pantry staples and is perfect for busy weeknights.
Ingredients
1.5 lbs Chicken thighs (bone-in, skin-on)
12 oz Smoked sausage (sliced)
1.5 cups Long-grain white rice
4 cups Chicken broth
1 medium Yellow onion (diced)
2 stalks Celery (diced)
3 cloves Garlic (minced)
2 Bay leaves
To taste Salt
To taste Black pepper
For garnish Fresh parsley (chopped)
Instructions
- Heat a large pot over medium heat. Brown the chicken thighs for 5 minutes per side. Remove and set aside
- In the same pot, cook the sliced smoked sausage for 3 minutes
- Add diced onion and celery. Sauté until soft, about 4 minutes
- Stir in minced garlic; cook for 1 minute
- Add rice, chicken broth, bay leaves, salt, and pepper. Return chicken to pot. Bring to a boil
- Reduce heat to low, cover, and simmer for 20 minutes
- Remove from heat and let rest for 10 minutes (do not stir)
- Fluff rice with a fork. Remove bay leaves. Garnish with chopped parsley. Serve immediately
Notes
To prevent mushy rice, do not stir after adding rice; use long-grain white rice and adhere to cooking times.
For extra flavor, use high-quality smoked sausage and avoid skipping the browning step.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of broth.
Freeze portions in freezer bags; thaw overnight in fridge before reheating.
If using boneless chicken breasts, reduce cooking time slightly. For a vegetarian version, replace chicken with extra smoked tofu.
