1 clove Minced garlic
1 (1.25 oz) packet Taco seasoning
0.5 cup Water
1 (15 oz) can Black beans, rinsed and drained
1 cup Shredded cheddar cheese
8 Large flour tortillas (burrito size)
1 (10 oz) can Red enchilada sauce
1 (15 oz) can Diced tomatoes, undrained
0.5 cup Beef broth


Instructions

  1. Prepare the Filling: Heat olive oil in a large skillet over medium-high heat. Brown the ground beef with the onion, breaking it up as it cooks. Drain any excess fat. Stir in garlic and taco seasoning. Add water and black beans; simmer for 5 minutes until liquid absorbs
  2. Assemble Burritos: Lay out tortillas. Spoon about 0.5 cup of the ground beef mixture down the center of each. Sprinkle with a generous tablespoon of shredded cheese. Fold in the sides, then roll tightly from the bottom
  3. Prepare for Baking: Arrange the rolled burritos seam-side down in a 9×13 inch baking dish
