Ingredients
1 tbsp Olive oil
1 lb Lean ground beef
0.5 cup Chopped onio
1 clove Minced garlic
1 (1.25 oz) packet Taco seasoning
0.5 cup Water
1 (15 oz) can Black beans, rinsed and drained
1 cup Shredded cheddar cheese
8 Large flour tortillas (burrito size)
1 (10 oz) can Red enchilada sauce
1 (15 oz) can Diced tomatoes, undrained
0.5 cup Beef broth
Instructions
- Prepare the Filling: Heat olive oil in a large skillet over medium-high heat. Brown the ground beef with the onion, breaking it up as it cooks. Drain any excess fat. Stir in garlic and taco seasoning. Add water and black beans; simmer for 5 minutes until liquid absorbs
- Assemble Burritos: Lay out tortillas. Spoon about 0.5 cup of the ground beef mixture down the center of each. Sprinkle with a generous tablespoon of shredded cheese. Fold in the sides, then roll tightly from the bottom
- Prepare for Baking: Arrange the rolled burritos seam-side down in a 9×13 inch baking dish
- Make the Sauce: In a medium bowl, whisk together the enchilada sauce, diced tomatoes, and beef broth. Pour this mixture evenly over the burritos
- Bake: Cover the dish with foil. Bake at 375°F (190°C) for 20 minutes. Remove foil, sprinkle remaining cheese over the top, and bake for another 10-15 minutes, or until cheese is melted and bubbly
Notes
Pro Tips: Drain the beef well to prevent greasy burritos. Don't overfill your tortillas to ensure easy rolling. Use good quality, fresh ingredients for the best flavor.
Storage & Reheating: Store leftover burritos in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave. For larger portions, cover with foil and warm in the oven at 350°F (175°C) for about 20 minutes.
Make Ahead: Assemble the burritos and pour the sauce over them. Cover and refrigerate for up to 24 hours before baking.
