A creamy, tangy, and naturally sweet key lime chia seed pudding that feels like a dessert but nourishes like a breakfast. Perfect for busy mornings or a light dessert.
Ingredients
¼ cup chia seeds
1 cup canned coconut milk (full-fat)
3 tablespoons fresh key lime juice
2 tablespoons maple syrup or honey
1 teaspoon key lime zest
½ teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the coconut milk, key lime juice, maple syrup, and vanilla extract until well mixed
- Sprinkle in the chia seeds and whisk vigorously for about a minute to prevent clumps
- Let the mixture sit for 5 minutes, then whisk again to ensure even distributio
- Pour the mixture into serving jars or a single container. Cover and refrigerate for at least 4 hours, or overnight, until thickened
- Before serving, stir well. Top with fresh berries, coconut cream, and extra lime zest if desired
Notes
Use white or black chia seeds; both work fine.
For a lighter version, substitute almond milk; texture will be thinner.
Regular limes can replace key limes if needed.
Store in an airtight container in the fridge for up to 5 days. If too thick, stir in a splash of milk.
Can be frozen in individual portions for up to 2 months; thaw overnight in the fridge.
