This Sautéed Zucchini and Mushrooms recipe is one of my absolute secret weapons. I remember one evening, after a particularly chaotic school pickup, I whipped up this simple zucchini and mushroom sauté in under 15 minutes. My picky middle child, usually suspicious of anything green, even asked for seconds! That’s when I knew this easy sautéed zucchini and mushrooms dish was a winner.
Ingredients
- Zucchini, 2 medium, sliced or chopped
- Cremini Mushrooms, 8 oz, sliced
- Olive Oil, 2 tbsp
- Garlic, 2 cloves, minced
- Salt, 1/2 tsp (or to taste)
- Black Pepper, 1/4 tsp (or to taste)
- Fresh Parsley, 2 tbsp, chopped (for garnish)
Instructions
1. 1. Heat olive oil in a large skillet or frying pan over medium-high heat.
2. 2. Add the sliced mushrooms to the hot pan. Cook for 5-7 minutes, stirring occasionally, until they release their moisture and brown nicely. This step is key for flavorful Sautéed Zucchini and Mushrooms.
3. 3. Next, add the sliced zucchini to the skillet with the mushrooms.
4. 4. Stir in the minced garlic. Continue to cook for another 3-5 minutes, or until the zucchini is tender-crisp. Don’t overcook your Sautéed Zucchini and Mushrooms!
5. 5. Season generously with salt and black pepper to taste.
