Ingredients
1 box (18-19 oz) fudge brownie mix
Ingredients listed on box (typically oil, water, egg)
1 1/2 cups sweetened shredded coconut
1 (11 oz) bag caramel bits, or 30–40 soft caramels
2 tablespoons milk or heavy cream
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1 teaspoon coconut oil or shortening
Instructions
- Prepare and bake the brownie mix according to package directions for a 9×13-inch pan. Let cool completely in pan on wire rack
- Toast coconut: spread on baking sheet, bake at 350°F for 5-10 minutes, stirring often, until golde
- Make caramel: combine caramel bits, milk, and salt in microwave-safe bowl. Heat in 30-second intervals, stirring between each, until smooth
- Immediately stir toasted coconut into warm caramel. Spread mixture evenly over cooled brownies
- Melt chocolate chips with coconut oil. Drizzle over caramel-coconut layer. Let set before cutting into squares
Notes
Let brownie base cool completely before adding topping to prevent melting/sliding.
For clean cuts, dip sharp knife in hot water and wipe dry between slices.
If caramel is too thick, add extra teaspoon of milk.
