Homemade sambal oelek chili paste made with fresh red chili peppers, garlic, vinegar, and salt. A versatile condiment with pure chili flavor that adds heat and depth to countless dishes.
Ingredients

8 oz fresh red chili peppers (like Fresno or Thai bird’s eye)
4 cloves garlic
2 tbsp distilled white vinegar
1 tsp salt
1 tsp granulated sugar (optional)
Instructions
- Prepare the Chilies: Wear gloves. Stem the chilies. Cut them in half and remove seeds for less heat
- Blend: Combine chilies, garlic, vinegar, salt, and optional sugar in a food processor
- Process: Pulse until you achieve a coarse, textured paste. Do not over-blend into a smooth puree
- Adjust & Store: Taste and adjust salt. Scrape into a clean jar
Notes
Wear gloves when handling chilies to protect your skin.
Store in an airtight jar in the refrigerator for 3-4 weeks.
Freeze in ice cube trays for longer storage and portioned use.
