Description

These Rhubarb Dream Bars balance tart rhubarb with a sweet, buttery crust and a creamy custard topping. A foolproof spring dessert that's simple, delicious, and perfect for sharing.


Ingredients

2 cups All-purpose flour
1 cup Butter (cold, cubed)
0.5 cup Brown sugar (packed)
4 cups Rhubarb (fresh or frozen, chopped)
1.5 cups Granulated sugar (divided use)
3 large Eggs (room temperature)
1 tsp Vanilla extract
0.25 cup All-purpose flour (for filling)
0.25 tsp Salt (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pa
  2. For the crust: Combine 2 cups flour and 1/2 cup brown sugar. Cut in cold cubed butter until crumbly. Press mixture firmly into pan. Bake 15 minutes
  3. For the filling: In a large bowl, whisk 1 1/2 cups granulated sugar, 1/4 cup flour, and salt. Add eggs and vanilla; beat until smooth. Fold in chopped rhubarb
  4. Pour filling over hot crust. Bake 35-40 minutes until center is set. Cool completely before cutting into 24 squares

Notes

Do not overbake; filling sets as it cools.

Use cold butter for a flaky crust.

If using frozen rhubarb, do not thaw to prevent soggy bottom.

Cool fully for clean slices.

Store in refrigerator for up to 5 days; freeze for up to 3 months.
