Description

Discover the magic of homemade refrigerator dill pickles! These incredibly easy and quick dill pickles are packed with fresh, tangy flavor, offering a satisfying crunch without any canning experience required.

Ingredients

Kirby cucumbers: 2 pounds (about 6-8 medium)

Water: 2 cups

White vinegar: 2 cups

Non-iodized salt (kosher or pickling): 2 tablespoons

Granulated sugar: 1 tablespoon

Fresh dill sprigs: 6-8 sprigs

Garlic cloves: 4-6, peeled and smashed

Black peppercorns: 1 teaspoon

Optional: Red pepper flakes: 1/2 teaspoon, for a kick

Instructions

1. 1. Wash cucumbers thoroughly. Slice them into spears or rounds, depending on your preference for these easy dill pickles.

2. 2. In a large non-reactive pot, combine water, vinegar, salt, and sugar. Bring the mixture to a rolling boil, stirring until salt and sugar dissolve. This is your brine for the refrigerator dill pickles. Remove from heat and let cool slightly.

3. 3. Meanwhile, divide the fresh dill, smashed garlic, and peppercorns among clean quart-sized jars. Add optional red pepper flakes to some jars for spicy dill pickles.

4. 4. Pack the cucumber slices tightly into the jars, leaving about a half-inch headspace. This ensures even brining for your refrigerator dill pickles.

5. 5. Carefully pour the cooled brine over the cucumbers in each jar, ensuring all cucumbers are submerged. You want every part of these refrigerator dill pickles to soak up the flavor.

6. 6. Tap the jars gently to release any air bubbles. Seal the jars with lids.

7. 7. Refrigerate the refrigerator dill pickles for at least 24-48 hours before enjoying. The flavors deepen significantly over time, making these homemade dill pickles even better.

Notes

Always use fresh, firm cucumbers; they make the crispest dill pickles. Trim the blossom end of the cucumber to prevent mushiness.

Ensure your brine cools slightly before pouring to maintain cucumber crispness. Pack the jars tightly, but don’t smash the cucumbers. For optimal flavor, give your homemade dill pickles at least two days in the fridge.

Store your sealed jars in the refrigerator for up to 3-4 weeks. Always ensure cucumbers stay submerged in the brine to prevent spoilage. Serve chilled straight from the jar for the best experience; no reheating necessary.
