Ingredients
3 cups frozen watermelon chunks
1/4 cup fresh mint leaves (packed)
2 tablespoons fresh lime juice
1/2 cup coconut water (cold)
Instructions
- Add the frozen watermelon, mint, lime juice, and coconut water to a high-speed blender
- Start on low, then increase to high. Blend until completely smooth. Scrape down the sides if necessary
- Taste and adjust: add more lime for tartness or more coconut water for thinness
- Serve immediately into glasses
Notes
Always use frozen watermelon; fresh will make a watery drink.
Freeze watermelon chunks on a baking sheet first to prevent clumps.
Do not over-blend; a quick blend preserves fresh taste.
Add mint leaves last to keep their bright flavor prominent.
Store leftover in an airtight jar in the refrigerator for up to 24 hours; shake or stir before drinking.
Can be frozen in popsicle molds for a frozen treat.
