Ingredients
1 lb Ground beef (or turkey)
1 medium Yellow onion, diced
1 packet Taco seasoning
1 can (8 oz) Tomato sauce
1 can (15 oz) Black beans, drained
1 cup Corn kernels (frozen or canned)
10 small Corn or flour tortillas
2 cups Shredded Mexican blend cheese
To taste Sour cream & salsa for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish
- Cook the ground beef and onion in a large skillet over medium heat. Drain excess fat
- Add taco seasoning, tomato sauce, black beans, and corn. Simmer for 5 minutes
- Layer half the tortillas in the prepared dish. Top with half the beef mixture
- Sprinkle with 1 cup of cheese. Repeat the layers: tortillas, beef, cheese
- Bake uncovered for 20 minutes. The cheese should be bubbly and golde
- Rest for 5 minutes before serving. Top with sour cream and salsa
Notes
Don't skip draining the beef; grease makes the casserole soggy.
Use fresh tortillas; stale ones turn tough.
