Description

This Quick & Easy Taco Casserole is a weeknight hero, layering seasoned beef, black beans, corn, tortillas, and cheese into one dish for a flavor-packed, minimal-effort meal that brings everyone to the table with smiles.


Ingredients

1 lb Ground beef (or turkey)
1 medium Yellow onion, diced
1 packet Taco seasoning
1 can (8 oz) Tomato sauce
1 can (15 oz) Black beans, drained
1 cup Corn kernels (frozen or canned)
10 small Corn or flour tortillas
2 cups Shredded Mexican blend cheese
To taste Sour cream & salsa for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish
  2. Cook the ground beef and onion in a large skillet over medium heat. Drain excess fat
  3. Add taco seasoning, tomato sauce, black beans, and corn. Simmer for 5 minutes
  4. Layer half the tortillas in the prepared dish. Top with half the beef mixture
  5. Sprinkle with 1 cup of cheese. Repeat the layers: tortillas, beef, cheese
  6. Bake uncovered for 20 minutes. The cheese should be bubbly and golde
  7. Rest for 5 minutes before serving. Top with sour cream and salsa

Notes

Don't skip draining the beef; grease makes the casserole soggy.

Use fresh tortillas; stale ones turn tough.

Let the casserole rest after baking to help it set perfectly.

For extra crispiness, broil the cheese for 2 minutes.

Double the recipe for a crowd; this casserole freezes beautifully.
