Fudgy, protein-packed brownies made with cottage cheese and cocoa powder. A healthy treat that kids love.
Ingredients
1 cup Full-fat cottage cheese
1 large Egg, room temperature
1/4 cup Maple syrup or honey
1/4 cup Unsweetened cocoa powder (Dutch-process recommended)
1 tsp Vanilla extract
1/4 tsp Salt
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper
- In a blender, combine cottage cheese, egg, maple syrup, and vanilla extract. Blend until completely smooth
- Sift cocoa powder and salt into the blender. Pulse until just combined
- Pour batter into the prepared pan. Smooth the top evenly with a spatula
- Bake for 20-25 minutes, until the center looks just set and edges begin to pull away from the pa
- Cool completely in the pan, then slice into 9 squares
Notes
For best texture, use full-fat cottage cheese and blend thoroughly to avoid lumps.
Do not overbake; the center should be soft for a fudgy texture.
Cool completely before slicing to prevent crumbling.
Store in an airtight container in the refrigerator for up to 5 days, or freeze individually wrapped in plastic wrap.
Reheat in the microwave for about 10 seconds for a fresh-baked taste.
