A vibrant and fresh corn salsa that's perfect for poolside snacking, featuring sweet corn, zesty lime, and a kick of jalapeño.
Ingredients
4 cups Fresh or frozen cor
1 cup Red bell pepper, diced
1/2 cup Red onion, finely chopped
1/4 cup Fresh cilantro, chopped
1 medium Jalapeño, seeded and minced
3 tablespoons Fresh lime juice
2 tablespoons Extra virgin olive oil
To taste Salt and black pepper
Instructions
- Char the corn: Heat a dry skillet over high heat. Add the corn kernels. Cook for 5-7 minutes, stirring occasionally until they blacken slightly
- Transfer the charred corn to a large bowl and let it cool for a few minutes
- Add diced red bell pepper, red onion, and minced jalapeño to the bowl. Toss everything together
- Drizzle in lime juice and olive oil. Sprinkle with salt and pepper. Stir gently to combine
- Fold in the fresh cilantro. Taste and adjust seasonings as needed. Serve at room temperature
Notes
Use fresh lime juice only; bottled juice lacks brightness.
Let the corn cool completely before mixing to prevent vegetables from wilting.
Chop all ingredients uniformly for perfect texture in every bite.
Let the salsa rest for 15 minutes before serving to deepen flavors.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze.
If salsa seems dry after storage, add a splash of fresh lime juice to revive it.
