Description

These No Bake S'mores Granola Bars capture campfire magic without any heat. You get the crunch of graham crackers, the sweetness of marshmallows, and rich chocolate, all mixed into a perfectly chewy bar. Ready in just 20 minutes, they are pure childhood joy.


Ingredients

1 cup Rolled oats
1/2 cup Honey
1/2 cup Peanut butter
1/2 cup Graham cracker crumbs
1/2 cup Mini marshmallows
1/2 cup Chocolate chips
1 tsp Vanilla extract


Instructions

  1. Line your pan. Grease an 8×8 inch baking dish. Line it with parchment paper. Leave overhang for easy removal
  2. Combine dry ingredients. In a large bowl, mix rolled oats and graham cracker crumbs. Set aside
  3. Warm wet ingredients. In a small saucepan over low heat, combine honey and peanut butter. Stir until smooth. Remove from heat. Add vanilla extract
  4. Mix everything. Pour the warm honey mixture over the dry ingredients. Stir until fully coated. The mixture will be thick
  5. Fold in the goodies. Gently fold in chocolate chips and mini marshmallows. Do not overmix
  6. Press firmly. Transfer the mixture to your prepared pan. Press it down very tightly. Use the bottom of a measuring cup or a piece of parchment paper. This step is crucial
  7. Chill to set. Refrigerate for at least 1 hour. The bars need this time to hold their shape
  8. Slice and serve. Lift the block out using the parchment. Cut into 12 bars. Enjoy your perfect No Bake S'mores Granola Bars!

Notes

Press the mixture extremely firmly. Loose bars fall apart.

Use mini marshmallows. They distribute evenly and melt slightly.

Do not overheat the honey mixture. Low heat only.

Chill for the full hour. Patience pays off.

Cut with a sharp knife. Wipe the blade between cuts for clean edges.

Store in airtight container in refrigerator for up to one week.

Freeze individually wrapped bars for up to three months.
