Description

These no-bake peanut butter honey oat bars are a quick, cool treat made with creamy peanut butter, honey, and old-fashioned oats. Perfect for hot days, lunchboxes, or post-workout snacks, they require no oven time and only five basic ingredients, offering a naturally sweetened, energy-boosting comfort snack.


Ingredients

1 cup creamy peanut butter
1/2 cup honey
2 cups old-fashioned oats
1 teaspoon vanilla extract
1/4 teaspoon salt


Instructions

  1. Line an 8×8 inch baking pan with parchment paper, letting edges hang over for easy removal
  2. In a saucepan, combine peanut butter and honey. Warm over low heat, stirring constantly until smooth. Remove from heat, then stir in vanilla and salt
  3. Pour the warm peanut butter mixture over oats in a large bowl. Stir until every oat is coated. Mixture will be thick
  4. Transfer mixture to prepared pan. Press down very firmly using the back of a measuring cup or a firm spatula
  5. Refrigerate for at least 2 hours until firm. Lift out using parchment, then cut into 16 bars
  6. Store in an airtight container in the refrigerator for up to 1 week, or freeze individually for up to 3 months. Enjoy cold

Notes

Do not use quick or instant oats; they make bars mushy. Old-fashioned oats provide the best chew.

For vegan version, substitute honey with maple syrup.

For nut-free version, use sunflower seed butter instead of peanut butter.

Add 1/4 cup chocolate chips, flax seeds, or dried cranberries for variation.

Press mixture with serious force to ensure bars hold together; chill for full 2 hours.

For clean cuts, use a sharp knife and wipe it clean between cuts.
