These no-bake peanut butter honey oat bars are a quick, cool treat made with creamy peanut butter, honey, and old-fashioned oats. Perfect for hot days, lunchboxes, or post-workout snacks, they require no oven time and only five basic ingredients, offering a naturally sweetened, energy-boosting comfort snack.
Ingredients
1 cup creamy peanut butter
1/2 cup honey
2 cups old-fashioned oats
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
- Line an 8×8 inch baking pan with parchment paper, letting edges hang over for easy removal
- In a saucepan, combine peanut butter and honey. Warm over low heat, stirring constantly until smooth. Remove from heat, then stir in vanilla and salt
- Pour the warm peanut butter mixture over oats in a large bowl. Stir until every oat is coated. Mixture will be thick
- Transfer mixture to prepared pan. Press down very firmly using the back of a measuring cup or a firm spatula
- Refrigerate for at least 2 hours until firm. Lift out using parchment, then cut into 16 bars
- Store in an airtight container in the refrigerator for up to 1 week, or freeze individually for up to 3 months. Enjoy cold
Notes
Do not use quick or instant oats; they make bars mushy. Old-fashioned oats provide the best chew.
For vegan version, substitute honey with maple syrup.
For nut-free version, use sunflower seed butter instead of peanut butter.
Add 1/4 cup chocolate chips, flax seeds, or dried cranberries for variation.
Press mixture with serious force to ensure bars hold together; chill for full 2 hours.
For clean cuts, use a sharp knife and wipe it clean between cuts.
