These Mexican Fiesta Pinwheels for Parties are a go-to appetizer for any celebration, known for being super easy to make, nourishing with fresh ingredients, and perfectly portable. They offer a burst of fresh Mexican-inspired flavors in every bite and can be prepared ahead of time, making them a game-changer for busy hosts.
Ingredients
8 oz Cream cheese, softened
1/4 cup Sour cream
1 tbsp Taco seasoning
4 oz Canned diced green chiles, drained
1 cup Cheddar cheese, shredded
1/4 cup Green onions, thinly sliced
1/4 cup Red bell pepper, finely diced
5–6 large burrito-size Flour tortillas
2 tbsp Fresh cilantro, chopped (optional, for garnish)
Instructions
- In a medium bowl, thoroughly beat the softened cream cheese until smooth
- Stir in the sour cream, taco seasoning, drained green chiles, shredded cheddar cheese, sliced green onions, and diced red bell pepper. Mix everything well until fully combined
- Lay one tortilla flat on a clean surface. Evenly spread about 1/4 to 1/3 cup of the cream cheese mixture over the entire surface of the tortilla, almost to the edges
- Tightly roll up the tortilla, starting from one edge. Ensure a snug roll to prevent unraveling
- Repeat with the remaining tortillas and cream cheese mixture
- Wrap each rolled tortilla tightly in plastic wrap. Refrigerate for at least 2 hours, or ideally overnight. This chilling time is crucial for firming up the mixture and making slicing easy
- Once chilled, unwrap the tortillas. Using a sharp, serrated knife, slice each roll into 1/2 to 3/4-inch thick rounds. Arrange these beautiful pinwheels on a serving platter
- Garnish with fresh cilantro, if desired, and serve immediately
Notes
Do not skip the refrigeration step. It is crucial! Chilling allows the cream cheese mixture to firm up, making slicing clean and easy. Overnight chilling yields the best results.
Roll the tortillas as tightly as possible. This prevents the pinwheels from falling apart when you slice them.
A sharp, serrated knife works best for slicing. It cuts through the tortilla and filling cleanly without squishing your beautiful pinwheels.
Spread the filling evenly across the entire tortilla. This ensures every bite has consistent flavor.
Store any leftover pinwheels in an airtight container in the refrigerator for up to 3-4 days. For best flavor and texture, serve within 2 days.
These pinwheels are best served chilled, directly from the refrigerator. Reheating is generally not recommended as it can alter the texture of the tortillas and the cream cheese filling.
