Description

Crisp autumn mornings always call for something special in our house. With three energetic kids, I often crave a breakfast that feels cozy, nourishing, and just a little bit magical to kickstart our day. One recent fall, as the leaves turned vibrant hues, I found myself with a can of pumpkin puree and a craving for something more exciting than toast.


Ingredients

Warm Water: 1 ¼ cups

Active Dry Yeast: 2 ¼ teaspoons (1 packet)

Maple Syrup: ¼ cup + 2 tbsp (for glaze)

Pumpkin Puree (not pie filling): ½ cup

All-Purpose Flour: 3 ½ cups + extra for dusting

Brown Sugar: 2 tablespoons

Salt: 1 teaspoon

Pumpkin Pie Spice: 1 ½ teaspoons

Vegetable Oil (for bowl): 1 teaspoon

Egg (for egg wash): 1 large

Water (for boiling): 8 cups

Baking Soda (for boiling): 1 tablespoon


Instructions

1. First, combine warm water, yeast, and 2 tablespoons of maple syrup in a large bowl. Let it sit for 5 minutes until foamy, activating the yeast for your pumpkin bagels.

2. Next, stir in the pumpkin puree, brown sugar, salt, and pumpkin pie spice.

3. Gradually add the flour, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes until smooth and elastic, developing the structure for your Maple Spiced Pumpkin Bagels.

4. Lightly oil a clean bowl, place the dough inside, and turn to coat. Cover with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size. This crucial step creates fluffy spiced pumpkin bagels.
