The carrots and apples are coated in a maple syrup and Dijon mustard glaze, then roasted until tender and caramelized. This gluten-free and vegan recipe is perfect for busy weeknights and holiday tables alike.
Ingredients
- Carrots, peeled and cut into ½-inch sticks – 1 lb
- Apples (Honeycrisp or Fuji), cored and sliced – 2 medium
- Pure maple syrup – 2 tbsp
- Dijon mustard – 1 tbsp
- Olive oil – 2 tbsp
- Fresh thyme leaves – 1 tsp
- Salt – to taste
- Pepper – to taste
Instructions
1. Preheat your oven to 425°F.
2. In a large bowl, whisk together maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
3. Add the carrots and apples to the bowl and toss well to coat.
4. Spread the mixture in a single layer on a baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until tender and golden.
6. Taste and adjust seasoning if needed before serving.
Notes
For even cooking, cut carrots and apples into similar sizes. Don’t overcrowd the pan to ensure roasting, not steaming. Line the baking sheet with parchment for easy cleanup.
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a 350°F oven for 10 minutes or microwave for 1–2 minutes; oven keeps edges caramelized. Substitute honey for maple syrup or regular mustard for Dijon.
Add a pinch of cayenne for heat, or toss in parsnips, sweet potatoes, or pecans. Serve with roast chicken, pork chops, quinoa, brown rice, or a green salad.
