A Loaded Potato Taco Bowl combines crispy roasted potatoes, seasoned ground beef, and all your favorite taco toppings for a comforting and customizable meal that’s perfect for Taco Tuesday.
Ingredients
4 large russet potatoes, diced
1 lb ground beef
1 packet taco seasoning
2 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup salsa
1/4 cup diced tomatoes
2 tbsp sliced green onions
2 tbsp sliced black olives
Instructions
- Preheat oven to 425°F. Toss diced potatoes with olive oil, salt, and pepper. Spread on a baking sheet. Roast for 25-30 minutes until golden and crispy
- While potatoes cook, brown the ground beef in a skillet over medium-high heat. Drain fat. Add taco seasoning and a splash of water. Simmer for 5 minutes
- Assemble the bowls: Start with a layer of crispy potatoes. Top with seasoned beef. Add shredded cheddar cheese, sour cream, salsa, diced tomatoes, green onions, and black olives
- Serve immediately for the best texture
Notes
Pat potatoes dry before roasting for extra crispiness. Do not overcrowd the baking sheet.
Store leftover components separately: potatoes in a paper towel-lined container, beef and toppings in airtight containers. Reheat potatoes in oven at 375°F, beef in skillet. Do not microwave potatoes.
Customize with substitutions: use ground turkey or chicken, black beans for vegetarian, sweet potatoes instead of russets, or add jalapeños for spice.
