Description

These Lemon Blueberry Cottage Cheese Protein Bites are a healthy, no-bake snack that tastes like a blueberry muffin but is packed with protein. Perfect for busy mornings, post-workout, or a quick pick-me-up.


Ingredients

1 cup Cottage cheese (small curd)
1 cup Rolled oats
1/2 cup Fresh or frozen blueberries
3 tablespoons Honey or maple syrup
2 tablespoons Fresh lemon juice
1 tablespoon Lemon zest
1 teaspoon Vanilla extract


Instructions

  1. Drain the cottage cheese to remove extra liquid
  2. Place the cottage cheese, oats, honey, lemon juice, lemon zest, and vanilla into a food processor. Blend until completely smooth and thick
  3. Gently fold in the blueberries by hand. Do not overmix
  4. Place the bowl in the fridge for 20 minutes to make the mixture easier to handle
  5. After chilling, use a cookie scoop to roll the mixture into small balls (about 12-14 bites). Place them on a lined baking sheet
  6. Store in an airtight container in the refrigerator for up to five days, or freeze for up to three months
