These Lemon Blueberry Cottage Cheese Protein Bites are a healthy, no-bake snack that tastes like a blueberry muffin but is packed with protein. Perfect for busy mornings, post-workout, or a quick pick-me-up.
Ingredients
1 cup Cottage cheese (small curd)
1 cup Rolled oats
1/2 cup Fresh or frozen blueberries
3 tablespoons Honey or maple syrup
2 tablespoons Fresh lemon juice
1 tablespoon Lemon zest
1 teaspoon Vanilla extract
Instructions
- Drain the cottage cheese to remove extra liquid
- Place the cottage cheese, oats, honey, lemon juice, lemon zest, and vanilla into a food processor. Blend until completely smooth and thick
- Gently fold in the blueberries by hand. Do not overmix
- Place the bowl in the fridge for 20 minutes to make the mixture easier to handle
- After chilling, use a cookie scoop to roll the mixture into small balls (about 12-14 bites). Place them on a lined baking sheet
- Store in an airtight container in the refrigerator for up to five days, or freeze for up to three months
Notes
Use full-fat cottage cheese for the best creaminess.
Chill the dough fully to prevent sticky hands.
For a firmer bite, add an extra tablespoon of oats.
Always zest the lemon before juicing it.
If using frozen blueberries, do not thaw them first; fold in gently.
