- 2 cups old-fashioned rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg
- 1 3/4 cups milk of choice
- 1/4 cup maple syrup or honey
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 cup fresh or frozen blueberries
- Extra blueberries and lemon zest for garnish, optional
Instructions
- 1. Preheat the oven to 350°F (175°C) and lightly grease an 8-inch baking dish.
- 2. In a large bowl, combine the oats, baking powder, cinnamon, and salt.
- 3. In a separate bowl, whisk together the egg, milk, maple syrup, melted butter, vanilla, lemon zest, and lemon juice.
- 4. Pour the wet ingredients into the dry ingredients and stir until evenly combined.
- 5. Gently fold in the blueberries.
- 6. Transfer the mixture to the prepared baking dish and spread evenly.
- 7. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.
- 8. Let cool for 5 to 10 minutes before serving.
- 9. Garnish with additional blueberries and lemon zest if desired and serve warm.
Notes
Frozen blueberries can be used without thawing.
Store leftovers covered in the refrigerator for up to 5 days.
Reheat individual portions in the microwave or enjoy chilled.
Serve with yogurt, extra maple syrup, or a drizzle of cream for an extra treat.
