Ingredients
8 oz Cream cheese, softened
5 Large eggs, separated
1/2 cup Granulated erythritol (or monk fruit)
1 tsp Vanilla extract
1/2 tsp Baking powder
Instructions
- Preheat your oven to 300°F. Line an 8×8 pan with parchment paper
- In a large bowl, beat cream cheese until smooth. Add egg yolks, sweetener, vanilla, and baking powder. Mix well
- In another bowl, whip egg whites until stiff peaks form. Fold them gently into the cream cheese mixture
- Pour batter into the pan. Bake for 25-28 minutes until golden and set
- Cool completely before slicing. Enjoy immediately
Notes
Whip egg whites to stiff peaks for maximum fluffiness. Fold them slowly to keep air in.
Use room temperature eggs and cream cheese for smooth batter. Do not overbake, or it will become dry.
Store in the fridge for up to 5 days. Freeze for up to 3 months. Reheat slices in microwave for 10 seconds.
For substitutions: use any keto-friendly sweetener; swap cream cheese for mascarpone; add lemon zest or cocoa powder; use vegan cream cheese for dairy-free.
