Description

These Italian Amaretti Cookies are delicate, chewy cookies made with almond flour and egg whites. They are naturally gluten-free and easy to bake, perfect for a special treat or family dessert.


Ingredients

2 cups Almond flour
1 cup Granulated sugar
3 large Egg whites
1 teaspoon Almond extract
1/2 cup Powdered sugar (for coating)


Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper
  2. Combine almond flour and sugar in a large bowl. Mix well
  3. In another bowl, whip egg whites until they form stiff peaks
  4. Gently fold the egg whites into the almond mixture. Add almond extract
  5. Chill the dough for 30 minutes. This makes rolling easier
  6. Roll small balls of dough. Coat each in powdered sugar
  7. Place them on the prepared sheet. Slightly flatten each ball
  8. Bake for 15-18 minutes. They should be lightly golde
  9. Cool completely on a wire rack. These Italian Amaretti Cookies set as they cool

Notes

Use fresh almond flour for the best taste.

Never overmix the batter; it makes cookies dense.

Chill the dough thoroughly to prevent spreading.

For extra chewiness, bake just until the edges brown.

Store in an airtight container at room temperature for up to one week, or freeze for up to three months.
