  • 1 cup, roughly chopped Mixed Nuts (almonds, walnuts, pecans, cashews)
  • ½ cup Mixed Seeds (chia, flax, pumpkin, sunflower)
  • ½ cup Dark Chocolate Chips or Chunks
  • ½ cup Nut Butter (almond, peanut, cashew)
  • ½ cup Honey or Maple Syrup
  • ¼ cup Coconut Oil (melted)
  • 1 teaspoon Vanilla Extract
  • ¼ teaspoon Pinch of Sea Salt

Instructions

1. 1. Prepare the Pan: Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides. This makes removal easy.

2. 2. Combine Dry Ingredients: In a large bowl, mix together the rolled oats, chopped nuts, mixed seeds, and sea salt. Stir everything thoroughly.

3. 3. Warm Wet Ingredients: In a separate, microwave-safe bowl or small saucepan, combine the nut butter, honey (or maple syrup), melted coconut oil, and vanilla extract. Heat gently until fully combined and smooth. Stir often.

4. 4. Mix Everything: Pour the wet ingredient mixture over the dry ingredients. Stir well with a sturdy spoon or spatula until all dry ingredients are evenly coated. Now, fold in the dark chocolate chips.

5. 5. Press into Pan: Transfer the mixture to the prepared baking pan. Press it down very firmly and evenly. Use the back of a spoon or a piece of parchment paper to really compact the mixture. This prevents crumbly bars.

6. 6. Chill: Place the pan in the refrigerator for at least 2-3 hours, or until completely firm. This chilling time is crucial for the bars to set properly.
