Description

A quick one-pot weeknight dinner featuring ground turkey, whole wheat rotini pasta, and bold taco flavors with a creamy, cheesy finish. Each serving delivers 36 grams of protein, making it a satisfying and family-friendly comfort meal.


Ingredients

1 lb Lean ground turkey (93/7)
8 oz Whole wheat rotini pasta
1 packet Reduced-sodium taco seasoning
1 (14.5 oz) can Canned diced tomatoes (undrained)
2 oz Reduced-fat cream cheese (softened)
1/2 cup Shredded cheddar cheese
2 cups Chicken or vegetable broth
1 tsp Garlic powder
To taste Salt and pepper
For garnish Fresh cilantro (optional)


Instructions

  1. Brown the turkey. Heat a large pot over medium heat. Add the ground turkey. Cook until no longer pink, about 5 minutes. Drain excess fat if needed
  2. Add seasoning and tomatoes. Stir in the taco seasoning and diced tomatoes. Cook for 1 minute
  3. Add pasta and broth. Pour in the whole wheat rotini and chicken broth. Stir everything together. Bring to a boil
  4. Simmer until tender. Reduce heat to low. Cover and cook for 10-12 minutes, stirring occasionally. Pasta should be al dente
  5. Make it creamy. Remove from heat. Stir in the softened cream cheese and shredded cheddar until melted and smooth
