Description

This High Protein Chocolate Pudding is a creamy, decadent, and guilt-free dessert designed to satisfy chocolate cravings while providing a substantial protein boost. It's incredibly easy to make, perfect for busy families, excellent for meal prepping, and a healthy treat that kids adore without suspecting its nutritional benefits.

Ingredients

Scale

1/4 cup Unsweetened Cocoa Powder
2 tablespoons Cornstarch
1/4 cup Granulated Sugar
Pinch Salt
2 cups Milk
1/2 cup Vanilla Protein Powder
1 teaspoon Vanilla Extract

Instructions

  1. In a medium saucepan, whisk together the cocoa powder, cornstarch, sugar, and salt. Break up any lumps
  2. Slowly whisk in 1/2 cup of milk until smooth, forming a thick paste. Then, gradually add the remaining 1 1/2 cups of milk, whisking constantly to prevent lumps
  3. Place the saucepan over medium heat. Bring the mixture to a gentle boil, whisking constantly. Continue to cook and whisk for 1-2 minutes until the pudding thickens significantly. It will coat the back of a spoo
  4. Take the pudding off the heat
  5. Immediately whisk in the vanilla protein powder and vanilla extract until completely smooth. Make sure no lumps remai
  6. Pour the High Protein Chocolate Pudding into individual serving dishes or a large bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Refrigerate for at least 2-3 hours, or until thoroughly chilled and set

Notes

Whisk Vigorously: Lumps can ruin your pudding. Whisk thoroughly, especially when adding milk and protein powder.

Low and Slow: Do not rush the cooking process. Medium heat ensures even thickening without scorching the bottom of your saucepan.

Direct Contact Plastic Wrap: Pressing plastic wrap directly onto the surface of the pudding prevents a rubbery skin from forming as it chills, keeping it smooth.

Chill Completely: Proper chilling is key for the best texture and flavor. This pudding tastes best when fully cold.

Adjust Sweetness: Taste your pudding before chilling and adjust the sweetener if needed.

Storage: Store leftover pudding in an airtight container in the refrigerator for up to 3-4 days. Ensure it is well-sealed.

Reheating: This pudding is best served chilled. Reheating is not recommended as it can alter the texture. Enjoy straight from the fridge!

Dairy-Free Variation: Use almond milk, soy milk, or oat milk, and ensure your protein powder is dairy-free.

Sweetener Variation: Swap granulated sugar for maple syrup, honey, or a sugar substitute like erythritol or stevia. Adjust to taste.

Protein Powder Variation: Any flavor of protein powder works. Chocolate protein powder will intensify the chocolate flavor.

Thickener Variation: If you prefer, substitute arrowroot powder for cornstarch, using the same measurements.

Extra Richness Variation: Add 1-2 tablespoons of peanut butter or almond butter for a nutty twist.

Serving Suggestion: Top with fresh berries (raspberries, strawberries, blueberries), whipped cream (dairy or coconut), chopped nuts (almonds, pecans, walnuts), chocolate shavings, or sprinkles for kids.
