Description

These High Protein Brownie Bites are rich, fudgy, and taste like a total indulgence, yet each one packs a serious protein punch. Made with simple, wholesome ingredients, they are perfect for after-school snacks, quick breakfasts, or post-workout treats.


Ingredients

1 cup Chocolate protein powder
½ cup Almond flour
¼ cup Unsweetened cocoa powder
1 medium Ripe mashed banana
1 large Egg
2 tablespoons Melted coconut oil
3 tablespoons Maple syrup
1 teaspoon Vanilla extract
¼ teaspoon Baking soda
¼ cup Dark chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly
  2. Mash the banana in a large bowl until smooth. Add the egg, melted coconut oil, maple syrup, and vanilla extract. Whisk everything together
  3. In the same bowl, add the chocolate protein powder, almond flour, cocoa powder, and baking soda. Stir until just combined. Be careful not to overmix. The batter will be thick
  4. Fold in the chocolate chips if you are using them. Evenly distribute the batter into your prepared muffin tin, filling each cup about three-quarters full
  5. Bake for 10-12 minutes. The edges should look set, and the tops should be slightly cracked. A toothpick inserted in the center should come out with a few moist crumbs
  6. Cool in the pan for 5 minutes. Then transfer the High Protein Brownie Bites to a wire rack to cool completely. They firm up as they cool

Notes

Do not overbake; they continue to cook as they cool.

Let them cool completely before removing from the pan to prevent crumbling.

Use a cookie scoop to portion the batter evenly.

Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze.

For a warm treat, microwave for 10-15 seconds.
