These High Protein Brownie Bites are rich, fudgy, and taste like a total indulgence, yet each one packs a serious protein punch. Made with simple, wholesome ingredients, they are perfect for after-school snacks, quick breakfasts, or post-workout treats.
Ingredients
1 cup Chocolate protein powder
½ cup Almond flour
¼ cup Unsweetened cocoa powder
1 medium Ripe mashed banana
1 large Egg
2 tablespoons Melted coconut oil
3 tablespoons Maple syrup
1 teaspoon Vanilla extract
¼ teaspoon Baking soda
¼ cup Dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly
- Mash the banana in a large bowl until smooth. Add the egg, melted coconut oil, maple syrup, and vanilla extract. Whisk everything together
- In the same bowl, add the chocolate protein powder, almond flour, cocoa powder, and baking soda. Stir until just combined. Be careful not to overmix. The batter will be thick
- Fold in the chocolate chips if you are using them. Evenly distribute the batter into your prepared muffin tin, filling each cup about three-quarters full
- Bake for 10-12 minutes. The edges should look set, and the tops should be slightly cracked. A toothpick inserted in the center should come out with a few moist crumbs
- Cool in the pan for 5 minutes. Then transfer the High Protein Brownie Bites to a wire rack to cool completely. They firm up as they cool
Notes
Do not overbake; they continue to cook as they cool.
Let them cool completely before removing from the pan to prevent crumbling.
Use a cookie scoop to portion the batter evenly.
Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze.
For a warm treat, microwave for 10-15 seconds.
