Herbed Ricotta Stuffed Chicken Rolls

Description

Tender chicken breasts rolled around a creamy herbed ricotta filling for an elegant, flavorful entrée.


Ingredients

  • 4 thinly sliced chicken cutlets
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh basil
  • 1 tbsp chopped fresh parsley
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • Toothpicks or kitchen twine

Instructions

  • 1. Preheat oven to 375°F (190°C).
  • 2. In a bowl, mix ricotta, Parmesan, basil, parsley, garlic powder, salt, and pepper.
  • 3. Lay out chicken cutlets and spread 2–3 tablespoons of ricotta mixture on each.
  • 4. Roll each cutlet tightly and secure with toothpicks or twine.
  • 5. Heat olive oil in a skillet over medium heat and sear rolls until lightly browned on all sides.
  • 6. Transfer rolls to a baking dish and pour chicken broth into the bottom of the dish.
  • 7. Bake for 20–25 minutes or until chicken reaches 165°F internally.
  • 8. Remove toothpicks or twine and rest for 5 minutes before serving.

Notes

  • Serve with a light tomato sauce or over sautéed greens.
  • For a richer flavor, add a spoonful of pesto to the ricotta mixture.
