- 4 thinly sliced chicken cutlets
- 1 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup chicken broth
- Toothpicks or kitchen twine
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC).
- 2. In a bowl, mix ricotta, Parmesan, basil, parsley, garlic powder, salt, and pepper.
- 3. Lay out chicken cutlets and spread 2โ3 tablespoons of ricotta mixture on each.
- 4. Roll each cutlet tightly and secure with toothpicks or twine.
- 5. Heat olive oil in a skillet over medium heat and sear rolls until lightly browned on all sides.
- 6. Transfer rolls to a baking dish and pour chicken broth into the bottom of the dish.
- 7. Bake for 20โ25 minutes or until chicken reaches 165ยฐF internally.
- 8. Remove toothpicks or twine and rest for 5 minutes before serving.
Notes
- Serve with a light tomato sauce or over sautรฉed greens.
- For a richer flavor, add a spoonful of pesto to the ricotta mixture.
