A comforting and versatile one-pan casserole featuring brown rice, black beans, and vegetables in a creamy, cheesy sauce. Perfect for busy nights and customizable for various dietary needs.
Ingredients
2 cups cooked brown rice
2 (15 oz) cans black beans, rinsed
1 bell pepper, diced
1 onion, diced
3 cloves garlic, minced
1 cup corn kernels
1 (15 oz) can diced tomatoes
1 cup vegetable broth
1 cup sour cream
2 cups shredded cheese
1 tbsp taco seasoning
Salt & pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Sauté onion and bell pepper until soft, then add garlic and cook for 1 minute
- In a large bowl, mix cooked rice, black beans, corn, diced tomatoes, sautéed veggies, broth, sour cream, 1 cup of cheese, and all seasonings
- Transfer mixture to a greased 9×13 inch baking dish. Top evenly with remaining cheese
- Bake for 25-30 minutes until bubbly and golden. Let rest for 5-10 minutes before serving
Notes
Use cooked and cooled brown rice to prevent mushiness.
Rinse black beans to remove excess sodium and starch.
For a crispier top, broil for the last 2-3 minutes of baking.
Can be assembled ahead and refrigerated before baking.
