Description
A simple, wholesome flourless flaxseed bread that's gluten-free, grain-free, and packed with fiber and omega-3s. Perfect for busy mornings as a nutritious base for various toppings.
Ingredients
2 cups ground flaxseed (flax meal)
5 large eggs
1/3 cup water
1 tsp baking soda
1/2 tsp sea salt
2 tbsp olive oil or melted coconut oil
1 tbsp honey or maple syrup (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a standard loaf pan with parchment paper
- In a large bowl, combine dry ingredients: flax meal, baking soda, and salt
- In another bowl, whisk eggs, water, oil, and optional sweetener
- Pour wet ingredients into dry ingredients and stir until a thick batter forms. Let sit for 2-3 minutes to thicke
- Transfer batter to prepared loaf pan and smooth the top with a spatula
- Bake for 35-40 minutes until top is firm and a toothpick comes out clea
- Cool completely in pan before slicing with a sharp serrated knife
Notes
For egg-free version: use flax eggs (1 tbsp ground flax + 3 tbsp water per egg, let sit).
Add variations like rosemary, everything bagel seasoning, or sunflower seeds.
Store wrapped at room temp for 2 days, refrigerate up to 1 week, or freeze up to 3 months.
Reheat by toasting for best texture.
