Ingredients

2 cups Cooked Chicken, shredded
1 large Ripe Avocado
2 tablespoons Greek Yogurt
1 tablespoon Lemon Juice, fresh
1 stalk Celery, diced
2 tablespoons Red Onion, minced
To taste Salt & Pepper


Instructions

  1. Mash the avocado in a large bowl with a fork until fairly smooth
  2. Stir in the Greek yogurt and lemon juice
  3. Add shredded chicken and stir to combine
  4. Toss in diced celery and minced red onio
  5. Season with salt and pepper to taste; adjust as needed
  6. Serve immediately or chill for an hour for deeper flavor

Notes

Use very ripe avocado for maximum creaminess; leave some chunks for texture.

For dairy-free, omit yogurt or use a dairy-free alternative; extra avocado can add creaminess.
