Description

These Healthy Apple Cinnamon Oat Muffins are incredibly moist, naturally sweetened with applesauce and maple syrup, and packed with fiber from oats and whole wheat flour. Perfect for a quick snack or a lunchbox treat, they bring comfort and joy with every bite.

Ingredients

Scale

1 cup old-fashioned rolled oats
1 cup whole wheat flour
1/2 cup unsweetened applesauce
1 medium apple, grated
1/3 cup maple syrup
1 large egg
1/2 cup milk (any kind)
2 tablespoons melted coconut oil
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamo
1 teaspoon vanilla extract
1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with liners
  2. Mix all dry ingredients in a large bowl: oats, flour, baking powder, baking soda, cinnamon, and salt
  3. Whisk wet ingredients in another bowl: applesauce, maple syrup, egg, milk, melted coconut oil, and vanilla
  4. Pour wet mixture into dry mixture. Stir gently until just combined. Do not overmix
  5. Fold in the grated apple. The batter will look thick and delicious
  6. Spoon batter evenly into the muffin tin. Fill each liner almost full
  7. Bake for 15 to 18 minutes. Insert a toothpick in the center; it should come out clea
  8. Let muffins cool in the pan for five minutes. Then transfer to a wire rack

Notes

Always use room temperature ingredients for the best texture.

Grate the apple right before mixing to avoid browning.

Do not overmix the batter; this keeps the muffins tender.

Measure oats correctly for consistent results.

Let muffins cool completely before storing.

For gluten-free, use certified gluten-free oats and a 1:1 gluten-free flour blend.

Quick oats can be used for a softer texture.

To make sugar-free, skip the maple syrup and increase applesauce to 3/4 cup.

Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze individually for up to 3 months.

Reheat in microwave for 15 seconds or in a warm oven for a crisper exterior.
