1 cup whole wheat flour
1/2 cup unsweetened applesauce
1 medium apple, grated
1/3 cup maple syrup
1 large egg
1/2 cup milk (any kind)
2 tablespoons melted coconut oil
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons ground cinnamo
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with liners
- Mix all dry ingredients in a large bowl: oats, flour, baking powder, baking soda, cinnamon, and salt
- Whisk wet ingredients in another bowl: applesauce, maple syrup, egg, milk, melted coconut oil, and vanilla
- Pour wet mixture into dry mixture. Stir gently until just combined. Do not overmix
- Fold in the grated apple. The batter will look thick and delicious
- Spoon batter evenly into the muffin tin. Fill each liner almost full
- Bake for 15 to 18 minutes. Insert a toothpick in the center; it should come out clea
- Let muffins cool in the pan for five minutes. Then transfer to a wire rack
Notes
Always use room temperature ingredients for the best texture.
Grate the apple right before mixing to avoid browning.
Do not overmix the batter; this keeps the muffins tender.
Measure oats correctly for consistent results.
Let muffins cool completely before storing.
For gluten-free, use certified gluten-free oats and a 1:1 gluten-free flour blend.
Quick oats can be used for a softer texture.
To make sugar-free, skip the maple syrup and increase applesauce to 3/4 cup.
Store in an airtight container at room temperature for up to 3 days, refrigerate for up to 1 week, or freeze individually for up to 3 months.
Reheat in microwave for 15 seconds or in a warm oven for a crisper exterior.
