Ingredients
2 large boneless skinless chicken breasts
2 medium ripe avocados
2 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
to taste salt
to taste black pepper
2 tablespoons fresh cilantro chopped
Instructions
- Preheat grill to medium-high heat (about 400°F). Pound chicken breasts to an even ½-inch thickness
- In a bowl, whisk together olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper. Coat chicken thoroughly with the marinade and let sit for 5 minutes
- Grill chicken for 5-7 minutes per side, until internal temperature reaches 165°F. Remove from grill and let rest for a few minutes
- While chicken rests, slice avocados. Slice rested chicken and fan avocado slices on top. Squeeze extra lime juice over everything and garnish with fresh cilantro. Serve immediately
