A simple, zesty Greek chicken marinade that transforms basic chicken into a juicy, herb-kissed masterpiece, perfect for weeknight dinners or weekend grilling.
Ingredients

1/2 cup extra virgin olive oil
1/3 cup fresh lemon juice
4 cloves garlic, minced
2 tbsp red wine vinegar
1 tbsp dried oregano
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
2–3 lbs chicken pieces
Instructions
- Combine all marinade ingredients in a bowl and whisk thoroughly
- Place chicken in a large resealable bag or shallow dish
- Pour the marinade over the chicken, ensuring it is fully coated
- Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally overnight
- Cook the marinated chicken as desired—grill, bake, or pan-sear until cooked through
Notes
Use a glass or ceramic dish for marinating, not metal.
Reserve a little fresh marinade before adding the chicken to use as a finishing sauce.
Do not reuse the marinade that touched raw chicken.
