Description

A simple, zesty Greek chicken marinade that transforms basic chicken into a juicy, herb-kissed masterpiece, perfect for weeknight dinners or weekend grilling.

Ingredients

Scale

1/2 cup extra virgin olive oil
1/3 cup fresh lemon juice
4 cloves garlic, minced
2 tbsp red wine vinegar
1 tbsp dried oregano
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
23 lbs chicken pieces

Instructions

  1. Combine all marinade ingredients in a bowl and whisk thoroughly
  2. Place chicken in a large resealable bag or shallow dish
  3. Pour the marinade over the chicken, ensuring it is fully coated
  4. Seal the bag or cover the dish and refrigerate for at least 2 hours, or ideally overnight
  5. Cook the marinated chicken as desired—grill, bake, or pan-sear until cooked through

Notes

Use a glass or ceramic dish for marinating, not metal.

Reserve a little fresh marinade before adding the chicken to use as a finishing sauce.

Do not reuse the marinade that touched raw chicken.
