Description

Golden Irish Pan Haggerty is a comforting, one-pan potato dish with crispy edges and a tender, cheesy heart. Made with simple layers of thinly sliced potatoes, onions, and sharp cheddar, it's a rustic and satisfying meal that's perfect for chilly evenings.


Ingredients

2 lbs Russet potatoes
1 large yellow onio
1 1/2 cups sharp cheddar cheese
3 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme


Instructions

  1. Prep the ingredients: Thinly slice the potatoes and onion. Grate the cheese
  2. Heat the pan: Melt 1 tablespoon of butter with the olive oil in a large, heavy-bottomed ovenproof skillet over medium-low heat
  3. Create the first layer: Arrange a third of the potato slices in a neat, overlapping layer. Season with salt, pepper, and a bit of thyme
  4. Add onions and cheese: Scatter half of the onion slices over the potatoes, then sprinkle with a third of the cheese
  5. Repeat the layers: Add another third of the potatoes, season, then the remaining onions, and another third of the cheese
  6. Top it off: Finish with the final layer of potatoes. Dot the top with the remaining 2 tablespoons of butter
  7. Cook: Cover the pan and cook on low heat for 30-40 minutes until the potatoes are tender when pierced with a knife
  8. Crisp the top: Uncover, sprinkle with the last of the cheese, and broil for 3-5 minutes until golden and crispy

Notes

Slice potatoes and onions evenly and thinly for best results.

Pat potato slices dry to remove excess starch for better browning.

Cook on low heat and be patient to prevent burning.

Let the finished dish rest for 5 minutes before slicing to help layers set.
