Description
Garlic Butter Roasted Cauliflower turns a plain veggie into something golden, crispy, and irresistible. Made on one sheet pan with simple pantry staples, it’s budget-friendly, kid-approved, and pairs with everything. Perfect as a weeknight side or holiday dish.
Ingredients
- Cauliflower florets – 1 large head (about 6 cups)
- Unsalted butter, melted – 3 tbsp
- Olive oil – 2 tbsp
- Garlic, minced – 4 cloves
- Parmesan, grated (optional) – 2 tbsp
- Salt – 1/2 tsp
- Black pepper – 1/4 tsp
- Fresh parsley, chopped – 1 tbsp
Instructions
- 1. 1. Preheat the oven to 425°F. Cut the cauliflower into even florets. Wash and dry them well (dry florets crisp better).
- 2. 2. Melt the butter. Stir in the olive oil, garlic, salt, and pepper. Whisk until mixed.
- 3. 3. Toss the cauliflower in the garlic butter. Spread it on a sheet pan in one layer, keeping space between the florets.
- 4. 4. Roast for 20 to 25 minutes, flipping halfway. Finish with parsley. Serve hot.
Notes
Substitutions: Swap butter for olive oil to make it vegan. Add red pepper flakes for heat, lemon zest, or smoked paprika. Sprinkle breadcrumbs for extra crunch or drizzle with buffalo sauce.
Pro Tips: Cut florets the same size for even cooking. Pat the cauliflower very dry. Do not crowd the pan. Use fresh garlic for the best flavor. Add parmesan in the last 5 minutes.
Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat at 400°F for 8 minutes (avoid the microwave). Freeze for up to 2 months.
Serving: Serve with roast chicken, grilled steak, fish, rice, pasta, or grain bowls, and a lemon wedge.
