1 tablespoon Lemon juice, freshly squeezed


Instructions

  1. Make the crust: Combine graham cracker crumbs and melted butter. Press firmly into a 9×9-inch pan lined with parchment. Freeze to set
  2. Prepare strawberry swirl: Blend thawed strawberries, granulated sugar, and lemon juice in a food processor until smooth. Set aside
  3. Make cheesecake filling: Beat softened cream cheese until smooth. Add powdered sugar and vanilla; mix well. In a separate bowl, whip cold heavy cream to stiff peaks. Gently fold whipped cream into cream cheese mixture
  4. Assemble: Spread filling evenly over crust. Drop spoonfuls of strawberry puree on top and swirl with a knife
  5. Freeze: Cover and freeze at least 6 hours or overnight. Lift out using parchment, slice, and serve from freezer
