Description

Oh, summer nights! They always take me back to backyard bonfires with my three busy bees, sticky fingers, and the pure magic of s’mores. But let’s be honest, traditional s’mores, while delicious, aren’t exactly a powerhouse of nutrition.

Ingredients

Scale

1 cup Gluten-Free Graham Crackers, crushed
2 tbsp Unsalted Butter, melted
1 cup Greek Yogurt (plain, full-fat)
1 scoop (approx. 25-30g) Vanilla Protein Powder
1/2 cup Mini Marshmallows
1/4 cup Chocolate Chips (dairy-free optional)
1/2 tsp Vanilla Extract
12 tbsp Maple Syrup or Honey (to taste)

Instructions

  1. Crush the gluten-free graham crackers thoroughly
  2. Then, mix them with melted butter to form the crust
  3. Press this mixture firmly into the bottom of a lined 8×8 inch pa
  4. Next, combine Greek yogurt, protein powder, vanilla extract, and maple syrup in a bowl
  5. Whisk until smooth and creamy
  6. Spread this protein s’mores mixture over the graham cracker crust
  7. Sprinkle the mini marshmallows and chocolate chips evenly over the yogurt layer
  8. Finally, freeze the Frozen Protein S’mores Gluten-Free for at least 4 hours, or until firm
  9. Slice and serve your delicious Frozen Protein S’mores Gluten-Free bars!

Notes

Feel free to customize your Frozen Protein S’mores Gluten-Free to fit your taste. For instance, use almond butter instead of melted butter in the crust for extra protein. You can also experiment with different protein powder flavors; chocolate protein powder makes a rich chocolatey Frozen Protein S’mores Gluten-Free. Dairy-free yogurt works beautifully for a completely dairy-free version of these healthy s’mores. Furthermore, try adding a sprinkle of sea salt to the chocolate layer for a salted caramel twist.

Always line your pan with parchment paper, leaving an overhang. This makes lifting out the frozen bars much easier. For best results, use a high-quality gluten-free graham cracker. Moreover, ensure your protein powder blends well; some powders can be gritty. A quick pulse in a food processor helps create a super smooth yogurt layer. Consequently, a sharp, warm knife makes clean cuts for your bars.

Store in an airtight container in the freezer. They will keep fresh for up to two weeks. I recommend separating individual bars with parchment paper to prevent sticking. There is no need for reheating; they are meant to be enjoyed straight from the freezer. Allow them to sit at room temperature for just a few minutes before serving for a slightly softer texture.

These treats are perfect on their own. However, they also pair wonderfully with a cup of cold milk or a hot coffee. Serve as a refreshing dessert after a light summer meal. They also make a fantastic post-workout snack due to the high protein content. Furthermore, they are excellent for school lunchboxes or picnics.
